I am having so much fun with Hello Fresh! These boxes are kind of like vegetarian cooking lessons, except I don’t have to stand around in a class with an annoying instructor and wear a stupid apron.
My next attempt at Hello Fresh was Chickpea-Powered Mediterranean Couscous.

Again, it was an easy “bowl.” Many of the vegetarian meal kits are bowls, but I can understand why. Meat offers a separation – meat, grain, vegetables. With vegetarian, it’s easier to mix it all together.

I chopped up a lot of veggies.

The couscous was cooked with veggie soup stock and lemon juice, and it was surprisingly good.

Here’s the finished product before I added feta cheese.
